Dinner Question

I took out pork chops to cook for dinner later, but I'm now thinking I kind of want to make BBQ/pulled pork sandwiches. Would the best way to do that to be just throw the cops into a crock pot, cover them in sauce and let them cook for several hours? Or is there some other way I should go about this?
