I took out pork chops to cook for dinner later, but I'm now thinking I kind of want to make BBQ/pulled pork sandwiches. Would the best way to do that to be just throw the cops into a crock pot, cover them in sauce and let them cook for several hours? Or is there some other way I should go about this?

Never heard pork chops for pulled pork since they are really thin; and usually a pork butt is used for that you usually cook it slow in oven until the meat is just falling off.

Directions:

Cook pork chops in nonstick skillet over medium-high heat 10 minutes or until browned. Add enchilada sauce. Heat to a boil. Cover and cook over low heat 45 minutes or until chops are fork-tender.

Remove pork from skillet and cool slightly. Pull pork into shreds using two forks. Return pork to skillet. Heat through.

Serve on rolls. Top with cheese and coleslaw.

thats one pound of pork chops; I just looked up pork chops into pulled pork sandwiches and you can find alot of help online.

Throw them in the crock pot with chicken broth or water and some of your favorite herbs/spices and let 'em cook. Then you can pull them off the bone and shred them & mix with sauce. That's how I'd do it anyway.
